  1. Heat 2 ½ tablespoons of olive oil in a large saute pan on low to medium heat.
  2. Add the vegetables to the warm oil in stages, beginning with the hardest ones first. For example, I sauteed the sliced carrots and chopped broccoli for 4 minutes before adding the zucchini and onions to the pan.
  3. While the vegetables are cooking, bring a large pot of salted water to a boil and add the spaghetti noodles. Boil for 10 minutes.
  4. Once the vegetables begin to soften and get some color on them, add a tablespoon of butter. The total saute time should be 8-10 minutes depending on how crunchy or soft you want them to be.
  5. Take the pan off the heat to stop the cooking and add the chopped chicken and drained noodles.
  6. Add the hoisin sauce and soy sauce. Stir well to coat everything.
  7. If you want a thinner sauce, stir in ⅓ cup of leftover pasta water.
  8. Serve and enjoy!
